Mini banana and carrot loaves
  • 1 1/4 cup sifted self-raising flour
  • 1 teaspoon ground cinnamon
  • 1/3 cup brown sugar
  • 100 gram finely chopped dark chocolate
  • 1/2 cup sultanas
  • 1 cup banana, mashed
  • 1 cup carrot, grated
  • 3/4 cup vegetable oil
  • 2 beaten eggs
  • icing sugar, to dust

    Preheat oven to moderate, 180°C. Lightly grease an 8-hole mini loaf pan. Line base and long sides of each recess with a strip of baking paper.

    Sift flour and cinnamon together into a large bowl. Stir in sugar, chocolate and sultanas. Make a well in the centre.

    In a jug, stir banana, carrot, oil and eggs together. Pour into dry ingredients and mix well.

    Spoon mixture evenly among prepared pans. Bake 20-25 minutes, until cooked when tested with a skewer.

    Cool in pan 5 minutes before turning onto a wire rack to cool completely. Dust with icing sugar to serve.


Cook these in a paper patty-lined muffin tray and your cooling time will be reduced by about 5 minutes.
