Ingredients

Method

1.Preheat oven to 180°C (160°C fan-forced). Grease oven trays.
2.Sift flour, ground ginger and sugar into a large bowl; rub in butter. Stir in dates, glacé ginger and rind, then combined egg and milk (do not overmix).
3.Drop level tablespoons of mixture, about 5cm (2 inches) apart, onto trays; sprinkle with extra sugar.
4.Bake rock cakes about 15 minutes. Cool on trays.
