Mini and date, ginger orange rockcakes
  • 2 cup (300g) self-raising flour
  • 1 teaspoon ground ginger
  • 1/3 cup (75g) caster (superfine) sugar
  • 90 gram (3 ounces) butter, chopped coarsely
  • 1 cup (140g) coarsely chopped dried dates
  • 1/4 cup (45g) finely chopped glacé ginger
  • 2 teaspoon finely grated orange rind
  • 1 egg, beaten lightly
  • 1/2 cup (125ml) milk
  • 1 tablespoon caster (superfine) sugar, extra

Method

    Preheat oven to 180°C (160°C fan-forced). Grease oven trays.

    Sift flour, ground ginger and sugar into a large bowl; rub in butter. Stir in dates, glacé ginger and rind, then combined egg and milk (do not overmix).

    Drop level tablespoons of mixture, about 5cm (2 inches) apart, onto trays; sprinkle with extra sugar.

    Bake rock cakes about 15 minutes. Cool on trays.
