Ingredients
Microwave strawberry jam
- 600 gram strawberries, hulled, sliced
- 1 1/4 cup caster sugar
- 1/4 cup lemon juice
Method
Microwave strawberry jam
- 1Combine strawberries, sugar and juice in a 3-litre (12-cup} microwave-safe bowl. Microwave, uncovered on High (100%) for 4-5 minutes or until sugar has dissolved and strawberries are soft.
- 2Place a small plate in the freezer.
- 3Microwave jam on High (100%) in 3-minute bursts for 12-15 minutes. Spoon a little jam onto prepared plate. Place plate in freezer for 2-3 minutes. Run a finger through centre of jam, if jam begins to wrinkle and stays in place, it is ready. If not, continue to microwave, in 2-minute bursts, then test again. Spoon hot jam into hot sterilised jars; seal while hot.
Notes
To sterilise jars, preheat oven to 120°C. Place freshly washed jars on a baking tray; heat for 30 minutes. Use while hot. This recipe was tested using a 750-watt microwave oven. If you use a higher wattage oven, cook on a tower heat setting.
