Ingredients

Microwave nachos
  • 420 gram can red kidney beans, drained, rinsed
  • 2/3 cup (170g) mild tomato salsa
  • 1/2 cup (120g) canned refried beans
  • 230 gram low-salt corn chips
  • 1 1/4 cup (150g) low-fat grated cheese

Method

Microwave nachos

    Combine kidney beans, salsa and refried beans in a bowl. Spread half of corn chips in a microwave-safe bowl. Top with half of bean mixture and half of cheese. Repeat layers with remaining ingredients.

    Microwave at 50% for 4 minutes, until cheese melts and bean mixture is heated through. Serve immediately.
