Mexican meatball tortillas

Whip up a batch of these tasty Mexican spiced chicken meatballs in under 10 minutes. Serve your meatballs wrapped in a warm tortilla with fresh salad for a quick family dinner.

Method

1.In a large bowl, combine mince, seasoning, egg and garlic. Mix well. Using wet hands, roll into walnut-sized balls. Arrange on a tray. Chill 20 minutes.
2.Heat oil in a large frying pan on high. Cook meatballs 7-8 minutes, turning occasionally, until browned and cooked through.
3.Meanwhile, make salsa: in a bowl, combine all ingredients. Mix gently. Season to taste.
4.Line each tortilla with lettuce leaves. Top each with 3-4 meatballs, tomato and avocado salsa. Wrap tortillas. Serve with sour cream.
