Mexican meatball tortillas
Whip up a batch of these tasty Mexican spiced chicken meatballs in under 10 minutes. Serve your meatballs wrapped in a warm tortilla with fresh salad for a quick family dinner.

Mexican meatball tortillas
- 500 gram chicken mince
- 1 sachet burrito seasoning
- 1 egg
- 1 clove garlic, crushed
- 2 tablespoon olive oil
- 6 flour tortillas
- 6 butter lettuce leaves
- 2 tomatoes, cut into thin wedges
- sour cream, to serve
Avocado salsa
- 1 avocado, stone removed, peeled, finely chopped
- 1 tablespoon coriander leaves
- 1 tablespoon lime juice
- 1 green onion, thinly sliced
Method
Mexican meatball tortillas
- 1In a large bowl, combine mince, seasoning, egg and garlic. Mix well. Using wet hands, roll into walnut-sized balls. Arrange on a tray. Chill 20 minutes.
- 2Heat oil in a large frying pan on high. Cook meatballs 7-8 minutes, turning occasionally, until browned and cooked through.
- 3Meanwhile, make salsa: in a bowl, combine all ingredients. Mix gently. Season to taste.
- 4Line each tortilla with lettuce leaves. Top each with 3-4 meatballs, tomato and avocado salsa. Wrap tortillas. Serve with sour cream.
