Mexican eggs

Ingredients

Mexican eggs
  • 2 teaspoon olive oil
  • 2 chorizo, halved lengthways, sliced
  • 2 tomatoes, chopped
  • 1 long red chilli, chopped
  • 1 cup mild salsa
  • 1/4 cup coriander leaves, plus extra, to serve
  • 1 green onion, chopped
  • 4 wholemeal tortillas
  • 4 fried eggs
  • grated tasty cheese, chilli sauce, to serve
Guacamole
  • 1 avocado, seeded, peeled
  • 1/2 lemon, juice

Method

    Heat oil in a large frying pan on high. Saute chorizo 3-5 minutes, until browned.

    Add tomatoes and chilli and cook 1 minute, until softened. Stir in salsa and simmer 1-2 minutes. Remove from heat; add coriander and onion. Cover to keep warm.

    To make guacamole, in a small bowl, mash avocado with lemon juice. Season to taste.

    Heat a medium frying pan on medium. Lightly spray each tortilla with oil. Cook 30 seconds each side, until lightly golden.

    Spread tortillas with guacamole, top with egg and a dollop of chorizo mixture. Sprinkle with extra coriander and cheese and season to taste. Serve with chilli sauce.
