Ingredients
Mexican eggs
- 2 teaspoon olive oil
- 2 chorizo, halved lengthways, sliced
- 2 tomatoes, chopped
- 1 long red chilli, chopped
- 1 cup mild salsa
- 1/4 cup coriander leaves, plus extra, to serve
- 1 green onion, chopped
- 4 wholemeal tortillas
- 4 fried eggs
- grated tasty cheese, chilli sauce, to serve
Guacamole
- 1 avocado, seeded, peeled
- 1/2 lemon, juice
Method
Mexican eggs
- 1Heat oil in a large frying pan on high. Saute chorizo 3-5 minutes, until browned.
- 2Add tomatoes and chilli and cook 1 minute, until softened. Stir in salsa and simmer 1-2 minutes. Remove from heat; add coriander and onion. Cover to keep warm.
- 3To make guacamole, in a small bowl, mash avocado with lemon juice. Season to taste.
- 4Heat a medium frying pan on medium. Lightly spray each tortilla with oil. Cook 30 seconds each side, until lightly golden.
- 5Spread tortillas with guacamole, top with egg and a dollop of chorizo mixture. Sprinkle with extra coriander and cheese and season to taste. Serve with chilli sauce.
