Mexican chicken wraps
  • 16 (1.2kg) chicken tenderloins
  • 1 35g packet taco seasoning mix
  • 8 large flour tortillas
  • 1 large avocado (320g), mashed
  • 2 cup shredded cos lettuce leaves
  • 2 large tomatoes (440g), coarsely chopped

Method

Mexican chicken wraps

    Toss chicken in seasoning mix; cook on heated oiled grill plate (or grill or barbecue) 2 minutes each side, until cooked through.

    Meanwhile, warm tortillas according to packet instructions.

    Spread tortillas with avocado; top with lettuce, tomato and chicken. Roll up to enclose filling.
