Meringue fruit mince slice

Method

1.Heat oven to 180C (160C fan bake). Grease a 17 x 27cm slice tin and line with baking paper with an overhang on all sides. Place flour, sugar and butter in a food processor and process until the mixture resembles fine crumbs.
2.Press the crumb mixture into the base of the slice tin. Bake for 20 minutes or until golden brown. Remove from the oven and turn the oven temperature down by 20 degrees C. Spread the fruit mince evenly over the crumb base.
3.Make the meringue. Place the egg whites in a clean bowl and beat with an electric mixer until soft peaks form. Slowly add the sugar one tablespoonful at a time while beating continuously. Add the vanilla. Beat for one minute more until the mixture is glossy.
4.Spread meringue over fruit mince. Bake for 20 minutes or until meringue is crisp.

This slice will last well for up to five days if stored in an airtight container.
