Ingredients

Melon and yoghurt
  • 1/2 honeydew melon, seeded, peeled and cut into chunks or wedges
  • 1 cup (280g) natural, greek-style yoghurt
  • sweetener to taste (optional)
  • 1/2 cup (75g) chopped pistachios

Method

Melon and yoghurt
  • 1
    Arrange honeydew melon on serving plates. Top each with a dollop of yoghurt (mixed with sweetener if desired) and sprinkle with pistachios.

Notes

Use sweeteners such as Smart, Equal or Sugarine.
