Meatloaf pie

Like a pie without the pastry, this meatloaf pie by Woman's Day is meaty and crispy on the outside, and filled with creamy vegetable flavour, vitamins and goodness on the inside.

Ingredients

Method

1.Preheat oven to hot, 200°C (180°C fan forced). Press the basic mince mix evenly over base and sides of a deep 8-cup casserole dish. Bake 15 minutes, until cooked through. Drain off excess liquid. Cool.
2.Meanwhile, place potatoes in saucepan, cover with cold water. Bring to boi1, cook 10 minutes. Add cauliflower. Boil 8-10 minutes until tender. Drain. Roughly mash.
3.Melt butter in saucepan on medium. Saute leek 3 minutes. Add flour, cook, stirring, 1 minute. Remove from heat. Gradually add milk, stirring until smooth. Return to heat, cook, stirring, until sauce boils and thickens. Simmer 3 minutes. Season.
4.Mix mash and corn into sauce. Spoon into meat case. Sprinkle with breadcrumbs and cheese. Bake 20-25 minutes until top is crisp and golden. Serve hot.
