Meatballs in saffron sauce
- 500 gram beef mince
- 1/3 cup (65g) basmati rice, well washed, rinsed, drained
- 2 clove garlic, crushed
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cumin
- 1 onion, very finely chopped
- 1 tablespoon olive oil
- 1/2 teaspoon ground chilli
- 1/2 teaspoon saffron threads
- 2 tablespoon chopped parsley
- 1 lemon, juiced
- steamed couscous, to serve
- lemon wedges, to serve
Method
Meatballs in saffron sauce
- 1Combine mince, rice, garlic, cinnamon and cumin. Season. With wet hands, shape mixture into small meatballs. Chill for 10 minutes.
- 2Place onion, oil, chilli, saffron and 5 cups water in a saucepan. Season, bring to boil and add meatballs. Cover, simmer on low for 30 minutes. Stir in parsley and lemon juice. Serve with couscous and lemon wedges.
