Method

1.Preheat oven to hot, 200°C. Lightly grease and line a 6-hole texas muffin pan.
2.To make filling, heat oil in a large frying pan on high. Add mince; brown well 4-5 minutes, breaking up lumps with a spoon as it cooks. Stir sauce, tomatoes and feta through; cool slightly.
3.Sift flour and baking powder together into a bowl. Make a well in centre and mix in combined milk, eggs and oil, until just combined.
4.Spoon enough batter into each recess until half-full. Cover with a heaped tablespoon of meat filling. Divide remaining batter among recesses to cover filling. Sprinkle with grated cheese.
5.Bake muffins 15-20 minutes, until golden brown. Serve hot or cold with tomato sauce.
