Method

1.Preheat oven to 180°C. Line a 10 x 20cm loaf pan with foil.
2.In a large bowl, combine mince, onion, carrot, egg, chutney, sauce and herbs. Mix well and season to taste.
3.Press mixture into pan. Bake 40 minutes. Drain excess cooking liquid from pan.
4.Meanwhile, to make the topping, cook potatoes in a medium saucepan of boiling, salted water 10-15 minutes, until tender. Drain well. Mash with milk and butter. Season to taste.
5.Preheat grill to hot. Brush meatloaf with extra chutney. Top with potato and fluff with a fork. Grill 10-12 minutes, until potato is crisp and golden. Serve in slices and accompany with salad, if liked.

You can add ½ cup leftover breadcrumbs or cooked rice to meatloaf mixture, to help absorb cooking juices.
