This buttery and citrusy marmalade pudding serves as a riveting afternoon tea or dessert - especially in winter.

  • 3 eggs, separated
  • 1/2 cup (110g) caster sugar
  • 75 gram butter, melted
  • 3/4 cup (180ml) milk
  • 2 teaspoon grated lemon rind
  • 1/3 cup (80ml) lemon juice
  • 1/4 cup (80g) lime marmalade
  • 1/3 cup (50g) self-raising flour
  • 1/4 cup (55g) caster sugar, extra
  • icing sugar, to serve

    Preheat oven 180°C (160°C fan-forced). Grease a 1 1/2 -litre (6-cup) ovenproof dish.

    Beat the egg yolks and sugar in a small bowl with an electric mixer until thick and creamy; transfer to a large bowl. Stir in the butter, milk, lemon rind, juice, marmalade and sifted flour.

    Beat egg whites in a clean small bowl with an electric mixer until soft peaks form. Add the extra sugar gradually; beat until dissolved between additions. Fold into lemon mixture in 2 batches. Pour into prepared dish.

    Put the dish into a large baking dish and pour in enough boiling water to come halfway up side of dish. Bake for about 50 minutes, or until pudding is set.

    Dust with icing sugar and serve.
