This buttery and citrusy marmalade pudding serves as a riveting afternoon tea or dessert - especially in winter.

- 3 eggs, separated
- 1/2 cup (110g) caster sugar
- 75 gram butter, melted
- 3/4 cup (180ml) milk
- 2 teaspoon grated lemon rind
- 1/3 cup (80ml) lemon juice
- 1/4 cup (80g) lime marmalade
- 1/3 cup (50g) self-raising flour
- 1/4 cup (55g) caster sugar, extra
- icing sugar, to serve
Method

- 1Preheat oven 180°C (160°C fan-forced). Grease a 1 1/2 -litre (6-cup) ovenproof dish.
- 2Beat the egg yolks and sugar in a small bowl with an electric mixer until thick and creamy; transfer to a large bowl. Stir in the butter, milk, lemon rind, juice, marmalade and sifted flour.
- 3Beat egg whites in a clean small bowl with an electric mixer until soft peaks form. Add the extra sugar gradually; beat until dissolved between additions. Fold into lemon mixture in 2 batches. Pour into prepared dish.
- 4Put the dish into a large baking dish and pour in enough boiling water to come halfway up side of dish. Bake for about 50 minutes, or until pudding is set.
- 5Dust with icing sugar and serve.
