1.Combine the soy sauce, honey, sesame oil, garlic and ginger in a shallow dish. Place the beef in the marinade and turn to coat it evenly. Cover the beef and place it in the fridge to marinate for up to 2 hours, turning it occasionally.
2.Preheat the oven to 190°C. Remove the beef from the marinade and pat it dry. Heat the oil in a large frypan over a medium-high heat. Add the beef and sear it on all sides.
3.Place the beef in a roasting pan and roast it in the preheated oven for 15-20 minutes, or until it is cooked to your liking. Set the beef aside to rest.
4.Just before serving, spread the coriander and parsley over a large sheet of baking paper. Brush the beef with the sweet chilli sauce and roll it in the herbs, pressing it to coat it evenly. Thickly slice the fillet and serve it with crispy spuds and stir-fried Asian greens or a simple salad.
