  • 1 tablespoon wholegrain mustard
  • 1 tablespoon dijon mustard
  • 2 tablespoon pure maple syrup
  • 1 tablespoon lemon juice
  • 4 pork cutlets (940g)
Apple salad
  • 1/2 cup (75g) whole-egg mayonnaise
  • 2 teaspoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 small apple (130g), quartered, sliced thinly
  • 1 baby cos (romaine) lettuce (180g), trimmed, leaves separated
  • 1 stalk celery (150g), trimmed, sliced thinly
  • 2 tablespoon coarsely chopped pecans, toasted

    Combine mustards, syrup and the juice in a medium bowl; add cutlets, turn to coat in mixture.

    Cook the cutlets on a heated oiled barbecue (or grill or grill pan).

    Meanwhile, make apple salad: Combine mayonnaise, mustard and juice in a medium bowl. Add apple, mix gently. Add lettuce and celery; toss gently. Sprinkle with nuts, season to taste.
