Maple and pistachio muesli

Sweet, nutty and packed full of wholegrains, this maple roasted fruit and pistachio muesli is beautiful served on it's own with fresh milk, or sprinkled atop yoghurt and fresh berries. Make in batches to give to your friends and family as gifts.

Method

Maple and pistachi muesli

1.Preheat oven to 140°C (120°C fan-forced). Combine syrup and oil in a small bowl.
2.Combine oats, bran, nuts and seeds in a large bowl. Stir in syrup mixture, mix well. Spread evenly onto two shallow oven trays. Roast 35 minutes, stirring occasionally. Add dried fruits to mixture, stir to combine. Roast further 5 minutes, or until browned lightly.
3.Remove trays from the oven; cool the muesli on trays. Pack into airtight jars or containers.

Apple and plum bran loaf

Grated apples and chopped plums make this bran loaf extremely moreish. It is perfect as a sweet bite for morning tea, so put a batch in the oven in the morning and enjoy freshly baked with a cup of tea.
