Mango, passionfruit and lime jam

Homemade jam doubtless beats the store bought version any day. Why don't you break away from the traditional berry flavoured jams and try this more tropical flavoured version? You'll be glad you did.

Ingredients

Mango, passionfruit and lime jam
  • 2 kilogram (4 pounds) mangoes, peeled, seeded, chopped finely
  • 1/2 cup (125ml) lime juice
  • 3 cup (660g) white (granulated) sugar, approximately
  • 1/3 cup (80ml) passionfruit pulp
  • 2 tablespoon finely grated lime rind

    Combine mango and juice in large saucepan; bring to the boil. Reduce heat; simmer, covered, about 20 minutes or until mango is soft.

    Measure fruit mixture; allow ¾ cup sugar for each cup of fruit mixture. Return fruit mixture and sugar to pan; stir over high heat, without boiling, until sugar dissolves.Bring to the boil; boil, uncovered, without stirring, about 15 minutes or until jam jells when tested. Stir in passionfruit pulp and rind.

    Pour hot jam into hot sterilised jars; seal immediately. Label and date jars when cold.
