Method

1.Preheat oven to moderate, 180°C. Line a 18 x 28cm slice pan with baking paper.
2.Place plain flour, macadamias, self-raising flour, butter, sugar and egg in a food processor. Pulse until a dough forms.
3.Using floured fingertips, press dough into pan. Bake for 15-20 minutes until golden. Cool for 10 minutes.
4.In a bowl, mix sour cream and sugar together. Spread evenly over base. Arrange mango slices in a single layer over cream.
5.Bake for 15-20 minutes, until topping is firm. Cool completely in pan. Cut into rectangles. Serve sprinkled with flaked coconut and accompany with cream. Store in an airtight container.

Replace fresh mango with stone fruit of choice or a favourite drained canned fruit.
