Ingredients
Mango macadamia slice
- 1 cup plain flour, sifted
- 3/4 cup macadamia nuts
- 1/2 cup self-raising flour, sifted
- 90 gram butter, chopped
- 1/2 cup caster sugar
- 1 egg
- 300 gram carton sour cream
- 1 tablespoon brown sugar
- 2 mangoes, seed removed, thinly sliced
- flaked coconut, to serve
- whipped cream, to serve
Method
Mango macadamia slice
- 1Preheat oven to moderate, 180°C. Line a 18 x 28cm slice pan with baking paper.
- 2Place plain flour, macadamias, self-raising flour, butter, sugar and egg in a food processor. Pulse until a dough forms.
- 3Using floured fingertips, press dough into pan. Bake for 15-20 minutes until golden. Cool for 10 minutes.
- 4In a bowl, mix sour cream and sugar together. Spread evenly over base. Arrange mango slices in a single layer over cream.
- 5Bake for 15-20 minutes, until topping is firm. Cool completely in pan. Cut into rectangles. Serve sprinkled with flaked coconut and accompany with cream. Store in an airtight container.
Notes
Replace fresh mango with stone fruit of choice or a favourite drained canned fruit.
