Mango, coconut & granola parfait

Upgrade your usual breakfast with this mango and coconut yoghurt granola parfait, which is packed with all the protein and vitamin C you need to fuel your day. Enjoy an explosion of fresh fruity flavours and put a spring in your step!

Ingredients

  • 1 ripe mango, cubed
  • 2 tablespoon orange juice
  • 1 cup Yoplait Coconut Protein Yoghurt
  • 1 cup granola or toasted muesli
  • a handful of coconut flakes to decorate

Method

    In a processor or blender blend ½ the mango with the orange juice.

    Spoon some granola into the bottom of each serving dish. Add a good spoonful of Yoplait Coconut Protein Plus Yoghurt and a spoonful of the mango puree.

    Add a spoonful of chopped mango to each serving then repeat twice with another layer of granola remaining yoghurt, mango puree and chopped mango.

    Decorate the top with a sprinkle of granola and some coconut flakes.

Notes

Serve as a luxurious breakfast or light summer dessert.
