Mandarin and pistachio friands

These French bite-sized cakes lend themselves to almost any combination of fruit and nuts. This recipe uses combines peppery pistachios with Australia's marvellous sweet, seasonal mandarins. Bon appetit!

Method

1.Preheat oven to moderate, 180°C. Generously grease a 12-hole friand pan.
2.In a large bowl, combine nuts, icing sugar and flour. Add butter, juice and zest. Mix to combine.
3.Lightly whisk egg whites, then fold through pistachio mixture. Spoon evenly into recesses.
4.Top each with a mandarin segment. Bake for 15-20 minutes or until cooked when tested.
5.Cool in pan for 5 minutes before transferring to a wire rack to cool completely. Dust with icing sugar to serve. Store in an airtight container.

You will need about 3 medium madarins for this recipe. If unavailable, you can use oranges. MAKES 12
