Ingredients
Lunchtime lemon pepper tuna salad
- 90 gram chunky-style tuna in spring water
- 1 stalk celery, finely chopped
- 1/4 telegraph cucumber, finely chopped
- 2 tablespoon chopped chives
- 2 tablespoon chopped mint
Dressing
- 3 tablespoon natural unsweetened yoghurt
- 1 tablespoon mayonnaise
- 1/2 teaspoon lemon pepper seasoning
Method
Lunchtime lemon pepper tuna salad
- 1Combine salad ingredients. Mix dressing ingredients together and add to salad. Stir carefully to coat salad, being careful not to mash the tuna too much. Season to taste.
- 2Pack into a lidded container and keep cool until needed, or divide the mixture and use to fill wraps. You could also toss through leftover rice or noodles.
