Lunchtime lemon pepper tuna salad

Ingredients

Lunchtime lemon pepper tuna salad
  • 90 gram chunky-style tuna in spring water
  • 1 stalk celery, finely chopped
  • 1/4 telegraph cucumber, finely chopped
  • 2 tablespoon chopped chives
  • 2 tablespoon chopped mint
Dressing
  • 3 tablespoon natural unsweetened yoghurt
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon lemon pepper seasoning

Method

Lunchtime lemon pepper tuna salad
  • 1
    Combine salad ingredients. Mix dressing ingredients together and add to salad. Stir carefully to coat salad, being careful not to mash the tuna too much. Season to taste.

    Pack into a lidded container and keep cool until needed, or divide the mixture and use to fill wraps. You could also toss through leftover rice or noodles.
