Lunchbox pasta salad with salami, corn and mayo dressing

Packed lunches just got a whole lot more delicious! This lunchbox pasta salad recipe is simple, tasty and can easily be adapted to suit the tastes of your child. Toss with creamy mayo dressing and enjoy!

Ingredients

  • 4 cup cooked pasta (about 2 cups dried)
  • 1 spring onion, finely diced
  • 8-10 cherry tomatoes, halved
  • 8-10 slices salami, sliced
  • 1/2 red capsicum, finely diced
  • small handful fresh spinach leaves, shredded
  • 1/2 cup corn kernels
  • 1/2 cup mayonnaise
  • zest and juice 1 lemon
  • 1 teaspoon honey mustard
  • 1 tablespoon mixed toasted seeds (eg sesame, linseed, pumkin, sunflower) or dukkah – optional

Method

    In a large bowl combine cooked pasta, spring onion, tomatoes, salami, capsicum, spinach and corn.

    Whisk together mayonnaise, lemon zest and juice, and mustard, and fold through the pasta. Portion into mini containers and, if desired, top with toasted seeds or dukkah.
