Little cardamom cakes with honey baked plums

Be careful if you are home alone with these cakes – they are addictive! This Nici Wickes recipe sees cardamom spiked cakes served with honey baked plums and whipped cream for a sweet little dessert

  • 1 3/4 cup plain flour
  • 2 1/2 teaspoon baking powder
  • 1 heaped tbsp ground cardamom
  • 1/2 cup ground almonds
  • 1/2 cup caster sugar
  • 2 eggs
  • 3 tablespoon honey
  • 1 cup natural yoghurt
  • 3/4 cup sunflower oil
  • whipped cream, crème fraîche or yoghurt, to serve
Honey baked plums
  • 12 plums halved, stone removed
  • 50 gram butter
  • 1/2 cup brown sugar
  • honey, to drizzle

    Preheat oven to 180°C. Grease a 12-hole muffin tin.

    Sift the flour and baking powder into a large bowl. Add the ground cardamom, ground almonds and sugar.

    In a separate bowl, whisk together the eggs, honey, yoghurt and oil.

    Add the wet ingredients to the dry ingredients, then fold in gently until combined.

    Fill muffin holes ¾ full, and bake for 20 minutes or until golden on top and a test skewer comes out clean. Allow to cool slightly before removing from the tin.

    To make the honey baked plums, place the plums cut- side up tightly in an ovenproof dish. Dot with butter and sprinkle with brown sugar. Drizzle with honey. Bake at 180°C for 15 minutes or until the plums are tender.

    Serve cakes warm with the honeyed plums and a dollop of whipped cream, crème fraîche or yoghurt.


  • To grind your own cardamom, place the pods on a board and smash with a rolling pin to release the seeds. Discard the pods and grind the seeds to a powder in a mortar and pestle.
