Little cardamom cakes with honey baked plums

Method

1.Preheat oven to 180°C. Grease a 12-hole muffin tin.
2.Sift the flour and baking powder into a large bowl. Add the ground cardamom, ground almonds and sugar.
3.In a separate bowl, whisk together the eggs, honey, yoghurt and oil.
4.Add the wet ingredients to the dry ingredients, then fold in gently until combined.
5.Fill muffin holes ¾ full, and bake for 20 minutes or until golden on top and a test skewer comes out clean. Allow to cool slightly before removing from the tin.
6.To make the honey baked plums, place the plums cut- side up tightly in an ovenproof dish. Dot with butter and sprinkle with brown sugar. Drizzle with honey. Bake at 180°C for 15 minutes or until the plums are tender.
7.Serve cakes warm with the honeyed plums and a dollop of whipped cream, crème fraîche or yoghurt.
  • To grind your own cardamom, place the pods on a board and smash with a rolling pin to release the seeds. Discard the pods and grind the seeds to a powder in a mortar and pestle.
