Little caramel, date and nut puddings

Ingredients

Method

1.Grease and flour the inside of a 12-hole Texas muffin tin or two six-hole Texas muffin tins.
2.Mix together golden and maple syrups until evenly combined then spoon 1 tsp of this mixture into the base of each muffin mould. Set aside.
3.Place chopped dates in a bowl and pour over Marsala and boiling water. Set aside to soak for at least 12 minutes.
4.Preheat the oven to 160°C fanbake. Beat the butter and sugar together until pale and fluffy. Add the eggs one at a time, beating well after each addition.
5.Sift the flour and baking powder into butter mixture and add the almonds and walnuts. Gently fold together. Add the soaked dates and liquid and mix until evenly combined.
6.Spoon mixture into muffin tin and bake for around 25 minutes or until a skewer inserted in the middle comes out clean. Cool in tin for 5 minutes, then loosen with a knife around the edges and turn out. Serve warm with soft vanilla ice cream.
