Method

1.Preheat oven to 180°C or 160°C fan-forced. Make a tiny slit in base of each tomato and arrange on a lightly oiled baking tray. Roast for 10 minutes.
2.In a large saucepan of boiling, salted water, cook linguine according to packet directions. Drain.
3.In a large frying pan, heat 2 tablespoons of oil on high. Cook chicken for 5 minutes, turning, until browned and cooked through. Reduce heat slightly and add garlic and roasted tomatoes. Heat 1 minute and season to taste. Add to linguine with basil and remaining oil and toss to combine.
4.Top with parmesan and season to serve.
