What kid does not love ice cream? What's even more thrilling for a child is a sweet drink and ice cream mixed together!

Ingredients

Method

1.Remove zest of limes using a vegetable peeler, leaving white pith behind. Squeeze limes to get 3/4 cup of juice. Add zest and juice to saucepan with sugar and water.
2.Bring to a simmer over medium heat, stirring until sugar has dissolved. Remove from heat, thenset aside for 30 minutes to cool and infuse.
3.Strain cordial into a jugto remove zest. Add food colouring and stir. Fill glasses 2/3 of the way up with soda water. Add cordial to taste and a scoop of ice cream.
4.Serve with a straw and a long spoon.
