Method
1.Preheat the oven to moderate (180°C). Grease a deep 1.25-litre (5-cup) capacity ovenproof dish.
2.In a small bowl, beat butter, rind, sugar and egg yolks with an electric mixer until mixture is creamy. Beat in sifted flour and juice, then gradually beat in milk.
3.In a clean small mixing bowl, beat the 4 egg whites until firm peaks form; fold through the lime mixture.
4.Pour the mixture into prepared dish. Place dish in larger baking dish containing cold water to come halfway up its side. Bake 40 minutes or until browned and just firm.
5.Dust with sifted icing sugar and serve immediately with cream or ice-cream, if desired.
