Method

1.Place peach flesh and lime juice in blender and puree until smooth. Pour water into medium saucepan, about one-third full. Place over heat and bring to a gentle simmer.
2.Wipe inside of medium bowl with juiced lime half. Add egg whites and half of the caster sugar. Use electric beaters to whip mixture until soft peaks form. Set aside.
3.Combine egg yolks and remaining sugar in second medium bowl. Add water to saucepan and heat to gentle simmer. Place a bowl of yolks and sugar mix over simmering water. Use electric beaters to whip mix on high speed for a few mins until pale and fluffy. Remove bowl from heat. Set aside cool.
4.Whip cream and vanilla in large mixing bowl until soft peaks form.
5.Gently folds egg whites through yolk mix (using metal spoon) until almost combined. Fold through lime zest.
6.Pour mixture into container. Cover with lid and freeze overnight.
7.Remove semifreddo from freezer and allow to soften slightly. Scoop balls into waffle cones, sprinkle with a lime zest and serve immediately.

If fresh peaches aren’t in season, simply use eight halves of the canned variety.
