Ingredients

  • 2 large tomatoes
  • 1/4 cucumber
  • 1 red capsicum
  • 3 spring onions
  • 425 gram can organic lentils, drained
  • 1 cup mint, chopped
  • 1 1/2 cup Italian parsley, chopped
  • zest of 1 lemon
Dressing
  • juice of 1 lemon
  • 1 teaspoon 100% pure maple syrup
  • 1 teaspoon apple cider vinegar
  • 1/4 cup olive oil
  • 1 clove garlic, crushed
  • 1 1/2 teaspoon sea salt
  • freshly ground black pepper

Method

    Dice the tomatoes, cucumber, capsicum and spring onions and place them in a bowl.

    Add the drained lentils, chopped herbs and zest and toss to combine.

    Mix all the dressing ingredients together and pour them over thelentil mix.
  • 4
    Stir to combine and serve.
