Scallop skewers
Lemon tarragon dressing

Method

1.Thread one lemon wedge onto each of eight bamboo skewers. Thread scallops onto skewers.
2.Make lemon tarragon dressing by combing all dressing ingredients in a screw-top jar. Shake well.
3.Spray heated barbecue grill plate with cooking-oil spray for 2 seconds. Cook skewers about 1 minute each side or until cooked as desired.
4.Serve scallops with lemon tarragon dressing and mesclun, if you like.
