  • 4 chicken breast fillets
  • 1 1/2 cup red quinoa
  • 2 bunch broccolini
  • 2 tablespoon honey
  • 2 teaspoon ground black pepper
  • sea salt flakes
  • 50 gram butter
  • 1/3 cup olive oil, plus 1 tablespoon extra

Method

  • 1
Finely grate lemon rind, then juice 2 lemons – you will need 1 tablespoon rind and 2 tablespoons juice. Halve chicken horizontally.
  • 2
Place chicken in a bowl with lemon rind and pepper. Season with salt flakes and turn to coat both sides.
  • 3
Rinse quinoa in a sieve under cold running water. Place in a medium saucepan with 2 cups water. Bring to the boil, then reduce heat to low and cook, covered, for 15 minutes or until tender. Remove pan from heat. Stand, covered, for 5 minutes.
  • 4
Heat half the butter and 2 tablespoons oil in a large, nonstick frying pan over high heat. Cook chicken in batches for 3 minutes on each side or until golden and cooked through. Remove from pan and cover to keep warm.
  • 5
Heat remaining butter and remaining oil in same pan. Cut broccolini in half lengthways and add to pan. Cook, turning, for 3 minutes or until tender. Season.
  • 6
Whisk honey, lemon juice andthe extra oil in a small bowl, then season to taste. Cut remaining lemon into slices.
  • 7
Serve chicken and broccolini topped with lemon slices and drizzled with honey dressing. Accompany with quinoa.
