Method
1.Grease and line a 30 x 20cm (base measurement) slice pan with baking paper, extending paper at long sides for handles.
2.Process biscuits, in batches, to make fine crumbs. Transfer crumbs to a large bowl. Add apricot, cherries, coconut, condensed milk, butter and zest. Mix to combine. Press mixture into prepared pan; smooth surface. Chill 4 hours, or until firm.
3.To making icing: combine sifted icing sugar and juice in a medium bowl. Mix until smooth.
4.Cut slice into squares. Drizzle icing over squares. Sprinkle with extra coconut. Serve.
You could use lime zest and juice instead of lemon.
