Ingredients
Lemon and apricot friands
- 1 1/2 cup icing sugar
- 1/2 cup plain flour
- 1 cup almond meal
- 3/4 cup dried apricots, chopped, plus 1 tablespoon extra
- 1 lemon, finely grated zest
- 6 egg whites
- 185 gram unsalted butter, melted
- 1 tablespoon lemon juice
Method
Lemon and apricot friands
- 1Preheat oven to moderate, 180°C. Lightly grease recesses of a 12-hole friand pan.
- 2Sift icing sugar and flour together into a large bowl. Blend in almond meal, apricots and zest.
- 3In a small bowl, Lightly whisk egg whites with a fork until frothy. Add to dry ingredients and mix lightly.
- 4Blend in butter and juice, stirring until combined. Divide mixture among prepared recesses. Sprinkle each with extra apricots.
- 5Bake for 15-20 minutes until golden and cooked when tested with a skewer. Cool in a pan for 5 minutes before turning onto a wire rack to cool completely.
Notes
Substitute dried apricots for any other dried fruit of choice.
