This Nici Wickes recipe sees leftover turkey combined with juicy oranges – warmed to bring back the sunshine in them – and tossed with a creamy green dressing to bring it all to life for a second sitting!

Method

Leftover turkey and orange salad

1.In a pan, heat the oil and gently warm the turkey and any vegetables and gravy you have left over. If you only have turkey, that’s fine, but add ¼ cup liquid – such as orange juice, white wine or water, so the turkey heats as this simmers.
2.Add the orange segments to the pan and cook until they are warmed through.
3.Spread the salad greens on a large plate and spoon the turkey and orange over. Sprinkle with the parsley and drizzle with the green dressing (below). Serve immediately.

4.Whizz all the ingredients in a food processor or blender and blend until smooth. Taste and season.
