Ingredients

Leftover turkey and orange salad
  • 2 tablespoon olive oil
  • 2 cup leftover turkey, torn or cut into bite-sized pieces
  • leftover roasted root vegetables – cooked onions, plus peas, gravy etc
  • 2-3 oranges, segmented
  • 2-3 cups torn lettuce leaves, baby spinach or other salad greens
  • small handful parsley
  • green dressing, to serve (see recipe below)
Green dressing
  • 1/4 cup parsley, chopped
  • small handful mint, smacked
  • 3 tablespoon mayonnaise or plain unsweetened yoghurt
  • 2 tablespoon lemon juice
  • 1/4 cup good-quality olive oil
  • salt and pepper, to taste

Method

Leftover turkey and orange salad
  • 1
In a pan, heat the oil and gently warm the turkey and any vegetables and gravy you have left over. If you only have turkey, that’s fine, but add ¼ cup liquid – such as orange juice, white wine or water, so the turkey heats as this simmers.
  • 2
Add the orange segments to the pan and cook until they are warmed through.
  • 3
Spread the salad greens on a large plate and spoon the turkey and orange over. Sprinkle with the parsley and drizzle with the green dressing (below). Serve immediately.

  • 4
Whizz all the ingredients in a food processor or blender and blend until smooth. Taste and season.
