Leafy grapefruit and celery salad
- 300 gram mixed salad leaves
- 1 ruby grapefruit
- 1 cup celery, finely sliced
- 1/4 cup (60ml) light olive oil
Method
Leafy grapefruit and celery salad
- 1Wash and pat dry mixed salad leaves. Place in a large serving bowl.
- 2Using a sharp knife, peel skin and pith from grapefruit. Cut into segments over a small bowl, reserving juice. Add segments and celery to serving bowl.
- 3Whisk oil into grapefruit juice, season and drizzle over salad. Toss to coat and serve.
