Ingredients
Layered avocado dip
- 2 ripe avocadoes
- 2 tablespoon lime juice
- 310 gram corn kernels, drained
- 3/4 cup sour cream
- 2 tablespoon taco seasoning
- 1 medium ripe tomato, finely chopped
- 2 tablespoon chopped coriander
- corn chips, to serve
Method
Layered avocado dip
- 1Using a fork, mash avocado and juice in a medium glass bowl until smooth. Season with salt and pepper. Place corn in the base of 4 x 1-cup glasses. Spoon avocado mixture over corn; smooth surface.
- 2Combine sour cream and taco seasoning; spread over avocado layer; smooth surface. Cover with plastic food wrap. Chill for 1 hour.
- 3Combine tomato and coriander. Sprinkle tomato mixture over the sour cream mixture to cover. Serve immediately with corn chips.
Notes
Budget tip: To turn into a main course, serve as a side with fish, meat or chicken. Make dip in a 4-cup serving bowl.
