Layered avocado dip

Ingredients

Layered avocado dip
  • 2 ripe avocadoes
  • 2 tablespoon lime juice
  • 310 gram corn kernels, drained
  • 3/4 cup sour cream
  • 2 tablespoon taco seasoning
  • 1 medium ripe tomato, finely chopped
  • 2 tablespoon chopped coriander
  • corn chips, to serve

Method

    Using a fork, mash avocado and juice in a medium glass bowl until smooth. Season with salt and pepper. Place corn in the base of 4 x 1-cup glasses. Spoon avocado mixture over corn; smooth surface.

    Combine sour cream and taco seasoning; spread over avocado layer; smooth surface. Cover with plastic food wrap. Chill for 1 hour.

    Combine tomato and coriander. Sprinkle tomato mixture over the sour cream mixture to cover. Serve immediately with corn chips.

Notes

Budget tip: To turn into a main course, serve as a side with fish, meat or chicken. Make dip in a 4-cup serving bowl.
