Ingredients

Lamb with white bean salad
  • 400 gram can cannellini beans, rinsed
  • 2 small ripe tomatoes, finely chopped
  • 1 ripe avocado, finely chopped
  • 1/2 cup finely chopped flat-leaf parsley
  • 1/4 cup finely chopped chives
  • 1/4 cup finely chopped basil
  • 2 tablespoon lemon juice
  • 2 tablespoon vegetable oil
  • 2 teaspoon wholegrain mustard
  • 1 clove garlic, crushed
  • 4 150g lamb forequarter chops

Method

Lamb with white bean salad

    Combine beans, tomato and avocado in a large bowl.

    Combine herbs, juice, oil, mustard and garlic in a medium bowl. Stir half the herb mixture through bean salad.

    Heat an oiled barbecue or char-grill pan over moderate heat. Cook lamb for 3-4 minutes each side for medium or until cooked as you like.

    To serve, place bean salad on plates. Top with lamb and remaining herb mixture.

Notes

Buy lamb in bulk. Use loin chops. Replace lamb with grilled chicken. Chop herbs just before use.
