Method

1.Preheat oven to moderate, 180°C. Line an oven tray with baking paper.
2.Heat oil in large frying pan on high. Saute onion and garlic for 1-2 minutes, until tender. Brown lamb with spice 5-6 minutes, breaking up lumps. Stir in almonds and paste and cook 1 minute. Season to taste and stir parsley through.
3.Cut tops from capsicums and scrape out seeds. Place cut side up on tray with lids stalk side up.
4.Fill evenly with lamb mixture. Cover loosely with foil and bake 30 minutes. Remove foil and bake further 5-10 minutes.
5.Sprinkle with remaining parsley and serve with lids and couscous.

Use cheaper green variety of capsicums and add 2 tablespoons sultanas to lamb mixture for sweetness.
