1.Make dukkah: Dry-fry seeds and nuts, separately, in small frying pan until fragrant and golden. Cool. Using mortar and pestle, grind seeds coarsely; add nuts, grind coarsely. Stir in salt, pepper and paprika..
2.Brush cutlets with oil, cook on heated grill plate (or grill or barbecue) about 3 minutes each side. Transfer to a warm plate; cover, stand 5 minutes.
3.Spread dukkah onto large plate. Press one side of each hot cutlet onto dukkah just before serving.
