1.To make the mint pesto, process mint, parsley, garlic and walnut pieces in a food processor, then with the motor running, add oil in a thin stream until the mixture forms a paste. Season with salt and pepper to taste.
2.Place mince, onion, mint and egg yolk in a bowl, season well with salt and pepper and mix well to combine. With damp hands, shape mixture into four large, flat patties.
3.Heat a little oil in a non-stick frying pan and fry patties for 5 minutes on each side until browned and cooked through.
4.At the same time, toast the burger buns under a hot grill to lightly brown. Layer meat patties and salad on bun bases, then place lids on top. Serve with a dollop of mint.
