Lamb burgers with mint pesto
- 1/2 cup mint leaves
- 1/2 cup parsley leaves
- 2 clove garlic
- 1/3 cup walnut pieces
- 1/3 cup olive oil
- pinch salt
- pinch pepper
- 600 gram mince
- 1 onion, finely chopped
- 2 tablespoon chopped fresh mint
- 1 egg yolk
- 8 small_piece lettuce leaves
- 4 piece burger buns, sliced in half
Method
Lamb burgers with mint pesto
- 1To make the mint pesto, process mint, parsley, garlic and walnut pieces in a food processor, then with the motor running, add oil in a thin stream until the mixture forms a paste. Season with salt and pepper to taste.
- 2Place mince, onion, mint and egg yolk in a bowl, season well with salt and pepper and mix well to combine. With damp hands, shape mixture into four large, flat patties.
- 3Heat a little oil in a non-stick frying pan and fry patties for 5 minutes on each side until browned and cooked through.
- 4At the same time, toast the burger buns under a hot grill to lightly brown. Layer meat patties and salad on bun bases, then place lids on top. Serve with a dollop of mint.
