Method

1.Cook noodles in a large saucepan of boiling water 2 minutes, or until almost tender. Drain; refresh under cold water. Set aside.
2.Place beef in a medium bowl. Add oil, sauce, sugar and chilli; mix well to combine. Cover beef with plastic wrap; chill 10 minutes to marinate.
3.Bring stock and water to the boil in a large saucepan over high heat.
4.Add choy sum and noodles; cook, stirring, 2 minutes Add marinated beef, onion and snow peas; stir well. Remove pan from heat. Stand, covered, 1 minute; stir well.
5.Serve soup topped with extra onion.

Thinly sliced beef will cook in hot soup.
