Method
1.Place a shallow metal container in the freezer to chill. Combine sugar and 1/2 cup water in a small saucepan over moderately low heat. Cook and stir for 2 minutes or until sugar has dissolved. Cool.
2.Blend or process kiwifruit until smooth. Stir kiwifruit puree and juice into syrup. Pour kiwifruit mixture info prepared container. Freeze for 1 hour 30 minutes to 2 hours or until mixture is partially frozen.
3.Transfer mixture to a medium bowl. Using an electric mixer, beat until smooth and slightly aerated. Return to pan. Freeze until firm. Spoon into serving glasses. Serve sorbet with pineapple wedges.
You’ll need 2 cups of pureed kiwifruit for this recipe. Try serving the sorbet with a selection of sliced tropical fruit. You can also make the sorbet in an ice-cream churn.
