Kiwifruit jellies with lemon sorbet

Kiwifruit jellies with lemon sorbet
- 1 cup (2-3 whole) kiwifruit flesh
- 1/2 cup (110g) caster sugar
- 1 lime, juice of
- 1 tablespoon gelatine powder
- lemon sorbet, to serve
Method
Kiwifruit jellies with lemon sorbet
- 1Gently pulse kiwifruit flesh in a blender and set aside. In a medium pan combine 1 cup water and caster sugar and stir on low heat until sugar dissolves. Increase heat to high and bring to boil for 2 minutes. Add kiwifruit and lime juice. Cover and set aside to cool for about 5 minutes.
- 2Sprinkle in gelatine and stir until completely dissolved. Strain mixture through a fine sieve into a jug.
- 3Pour into small glasses or serving bowls and chill for 3 hours, until set. Top each with a small scoop of lemon sorbet and serve.
Notes
Kiwifruit can't be used raw in jelly recipes as they contain an enzyme that prevents gelatine setting.
