Ingredients
Kiwi pikelets with maple butter
- 1 cup self-raising flour
- 2 tablespoon caster sugar
- 1 cup milk
- 1 egg
- 50 gram butter, melted, plus 30 g extra melted
- 2 kiwifruit, peeled, sliced
Maple butter
- 60 gram butter, at room temperature, chopped
- 2 tablespoon maple syrup
Method
Kiwi pikelets with maple butter
- 1Sift flour into a large bowl. Stir in sugar. Make a well in the centre of dry ingredients.
- 2In a jug, whisk together milk, egg and butter until well combined. Gradually whisk into the well until batter is smooth.
- 3Heat a large non-stick flying pan on medium. Brush with extra butter.
- 4Spoon 4 level tablespoons of batter into the pan. Top each round with a slice of kiwifruit. Cook for 1-2 minutes until bubbles appear on the surface, then turm to cook the other side for 1 minute until golden. Transfer to a wire rack. Repeat with remaining batter and kiwifruit.
- 5Meanwhile; to make maple butter; in a small bowl, using an electric mixer, beat butter until creamy. Gradually beat in syrup. Serve pikelets with maple butter.
Notes
makes about 12 These pikelets freeze well - thaw and reheat in microwave on medium for 20 seconds for each pikelet.
