Method

Soba noodle salad

1.To make the dressing, combine the dashi granules, soy sauce, mirin, sugar and water in a small saucepan and bring to the boil, stirring so as to ensure the sugar and dashi dissolves. Remove from the heat and allow the sauce to cool. Add the pickled ginger and finely sliced green onions.
2.Cook the noodles in boiling water for 2-3 minutes or until they are just tender; drain and rinse with cold water.
3.Toss the noodles, daikon, cucumber and dressing together; divide between four bowls. Serve topped with roasted sliced seaweed and teriyaki salmon, if desired.

Not suitable to freeze or microwave.
