Itty bitty fruit salad with passionfruit and vanilla syrup
- 1 cup passionfruit pulp (6-8 passionfruit)
- 1/3 cup caster sugar
- 2 limes, finely grated zest, juice of
- 1 vanilla bean, halved, seeds removed and reserved
- 1/2 cup water
- 2 punnet (500g) strawberries, hulled, chopped
- 1 honeydew melon, seeds removed, flesh scooped with melon baller
- 2 punnet (500g) raspberries
- 2 punnet (500g) blueberries
- 3 mangoes, skin and seed removed, chopped
- 3 kiwifruit, peeled, chopped
- 1/2 bunch mint leaves
Method
Itty bitty fruit salad with passionfruit and vanilla syrup
- 1Place passionfruit pulp, sugar, zest, juice, vanilla bean and seeds and water in a saucepan over medium-high heat.
- 2Simmer 10 minutes, until syrupy. Remove from heat; transfer to a small bowl to cool slightly.
- 3Place all fruit into a large mixing bowl.
- 4Discard vanilla pod from syrup. Pour three-quarters syrup over fruit salad; toss well to combine. Cover with plastic wrap; chill until cold.
- 5Toss through mint leaves, scoop salad into serving bowls and drizzle with remaining fruity syrup.
