Italian dressing
- 1 clove garlic, crushed
- 2 tablespoon olive oil
- 2 tablespoon lemon juice
Italian-style bean salad with mozzarella
- 200 gram green beans, trimmed, halved crossways
- 2 x 420g cans four-bean mix, rinsed, drained
- 2 teaspoon finely chopped fresh thyme
- 2 teaspoon finely chopped fresh oregano
- 1/3 cup coarsely chopped fresh flat-leaf parsley
- 100 gram mozzarella cheese, sliced thickly
- 3/4 cup (110g) drained sun-dried tomatoes, sliced thinly
- 1 medium brown onion (150g), sliced thinly
- 1 cup (120g) seeded black olives
Method
Italian-style bean salad with mozzarella
- 1Place ingredients for italian dressing in screw-top jar; shake well.
- 2Boil, steam or microwave green beans until tender; drain. Rinse under cold water; drain.
- 3Place green beans and four-bean mix in medium bowl with remaining ingredients and dressing; toss gently to combine.
