Method
1.Cook pasta in a saucepan of boiling salted water for 10 minutes or until tender. Drain; return to pan.
2.Meanwhile, heat half the oil in a frying pan over moderate heat. Add sausages; cook and turn for 10 minutes or until cooked. Rest for 5 minutes. Slice thickly.
3.Heat remaining oil in same pan over moderate heat. Add onion and garlic; cook and stir for 3 minutes or until soft. Add sausage, tomatoes and 1 1/2 cups water. Simmer, stirring occasionally, for 10 minutes or until sauce reduces. Add to pasta in pan; stir to combine. Stir in parsley and olives. Serve with salad.
Use chicken or pork sausages instead of lamb. You can use any short pasta shape, including bow ties, macaroni and spirals. Use salami or ham. Slice, add to sauce and heat.
