Italian flatbread pizza

This delicious Italian-style prosciutto and tomato flatbread pizza is wonderfully indulgent, but is easy enough to enough as a quick weeknight dinner. The whole family will love tucking into this one.

Ingredients

Tomato sauce

Method

1.Preheat oven to hot, 200°C. Line 2 oven trays with baking paper.
2.Make tomato sauce: In a small saucepan heat oil on medium. Saute onion and garlic 4-5 minutes until tender. Add tomatoes and simmer 8-10 minutes until thickened. Stir basil through and season to taste.
3.Place bread on oven trays. Spread each evenly with sauce. Sprinkle each with ½ cup pizza cheese. Top with artichokes, bocconcini, prosciutto and onion. Season and sprinkle with remaining cheese.
4.Bake 10-15 minutes until prosciutto is crisp and cheese melts. Serve sprinkled with basil leaves. Accompany with salad (see tips).

It’s a good idea to add a pinch of sugar to the tomato sauce to balance out the acidity. We used rocket, radicchio and a dressing of lemon juice, olive oil and mustard.
